     Set within a beautifully renovated manor house built in 1785, Carduelis will offer a unique blend of design, elegance, and sustainable gastronomy.  Located on 44 acres of pristine landscape at The Inn at Vaucluse Spring, our boutique hotel is nourished by a natural spring that flows with 1.5 million gallons of pure, life-sustaining water daily.

   At Carduelis, our philosophy is rooted in biodiversity, regenerative agriculture, and a deep respect for the land. We are dedicated to crafting inventive, authentic cuisine that celebrates the natural rhythm of nature and the vibrant flavors of our farm and gardens.
